Thai chicken cakes with sweet chilli sauce
2 chicken breasts, cubed
1 garlic clove, finely diced
Small piece of root ginger, peeled and finely chopped
1 small onion, diced
4 tbsp fresh coriander
1 green chilli, seeded and roughly chopped
2 tbsp olive oil
Sweet chilli sauce and lime wedges to serve
Tip the chicken, ginger, garlic, onion, coriander and chilli into a food processor and add seasoning.
Blitz until the mixture is well incorporated.
Shape the minced chicken into patties using your hands.
Heat the oil in a pan and fry the cakes over a medium heat for about 10 minutes, turning half way.
Serve with a lime wedge and some sweet chilli dipping sauce.
