This quick bread, flecked with bits of pepperoni, sun-dried tomato sauce and cheese, is perfect to serve with a soup or salad.
200g plain flour
1 tbsp sugar
1 tbsp baking powder
1 garlic clove, grated
¼ tsp dried Italian herbs
¼ tsp black pepper
2 large eggs
235ml milk
60ml olive oil
120g pepperoni slices, chopped
Sundried tomato paste, to top
150g mozzarella cheese, grated
Fresh basil, for garnish
Preheat the oven to 180°C / 350°F / Gas mark 4.
Line a baking tray with greaseproof paper and set aside.
In large bowl, whisk together the flour, sugar, baking powder, garlic salt, herbs and pepper.
In another bowl, whisk eggs, milk and olive oil until well combined.
Make a well in flour mixture; pour in egg mixture.
Stir until dry ingredients are just moistened.
Gently scrape into the prepared baking tray.
Spoon over a layer of the sundried tomato paste and sprinkle the cheese.
Bake for 50 to 60 minutes or until skewer comes out clean.
Remove to rack to cool for 5 minutes.
Run a spatula around the edges to remove the bread and cool on rack.
Garnish with basil, slice and serve.
