This is a lovely, simple and budget friendly fruit dessert.
200g wholemeal bread, torn into chunks
85g butter, melted
85g demerara sugar
1 tsp cinnamon
1¼ kg plums, quartered and stoned
2 tbsp caster sugar
1 tbsp cornflour
Yoghurt, to serve
Preheat the oven to 200°C / 400°F / Gas mark 6.
Line a baking tray with greaseproof paper and set aside.
Using a food processor, blitz the bread to chunky crumbs.
Spread over the prepared tray and bake for 10-12 minutes, stirring now and then until crisp.
Pour them into a bowl and stir in the butter, demerara sugar and cinnamon.
Reduce the oven tempurature to 160°C / 325°F / Gas mark 3.
Put the plums, sugar and cornflour into a large lidded pan.
Place over a medium heat and stir for 1-2 minutes until the cornflour is incorporated.
Add 200ml of water, cover and simmer gently for 15-20 minutes.
Layer the plums and crumbs in an ovenproof dish, finishing with a layer of crumbs and bake for 20 minutes.
Serve hot, with yoghurt if desired.
