Nothing is tastier than homemade potato salad. Serve with cooked ham slices for lunch or BBQ chicken for dinner.
5 potatoes, peeled and chopped
3 shallots
60g cup chopped onion
120g pickle relish
3 eggs
120g chopped celery
60g mayonnaise
1/4 tsp garlic powder
1 tbsp mustard
Pepper and salt to taste
Boil the potatoes in a pot of salted water and cook until tender.
Cook the eggs in a pot of hot water until they are hard boiled. Remove the shell and finely slice.
Mix the potatoes, eggs, celery, onion, relish, garlic powder, mustard, pepper and mayonnaise together.
Chill in the refrigerator until ready to serve.
