Potato salad with Dijon mustard and dill
A simple salad that goes well with most dishes and makes an ideal side for larger groups.
 

3kg new potatoes, scrubbed and halved (quartered if large)

2-3 tbsp white wine vinegar

2-3 tbsp Dijon mustard

3 tbsp olive oil

40g fresh dill, chopped

Bring a large pot of water (enough to cover the potatoes by 2 fingers) to a gentle boil.

Add in the potatoes.

Cover and cook until just tender, about 15 to 20 minutes.

In a large serving bowl, combine the vinegar and Dijon mustard then season generously with salt and pepper.

Add the hot cooked potatoes and toss to coat.

Let cool, tossing occasionally.

Add the oil and dill to cooled potato mixture.

Taste and season with salt and pepper, if necessary and toss again before serving.
