Quinoa and herb salad

A quick and deliciously filling salad to make for a healthy meal.
200g quinoa
1 bunch celery
1 red pepper
1 apple, cut into matchsticks
Juice 1 lemon
4 tbsp olive oil
Handful toasted hazelnuts, roughly chopped
1 red chilli, deseeded and chopped
Large handful pomegranate seeds, optional
Small bunch parsley, chopped
Small bunch mint, chopped
Small bunch tarragon, chopped
Put the quinoa in a large bowl and just cover with boiling water.
Cover the bowl with cling film or a plate and leave to absorb all the water.
Meanwhile, separate the sticks of celery and set the leaves aside.
Wash well and finely slice the celery and roughly chop the leaves.
Cut the red pepper into rough chunks and set aside.
Tip the apple in a bowl and toss in a little lemon juice. In a bowl, mix the remaining lemon juice with the oil and some salt and pepper then set aside.
Gently fluff up the quinoa with a fork.
Mix the sliced celery, pepper and apple through followed by the nuts, chilli, pomegranate seeds if using and herbs.
Drizzle over the lemon juice dressing and toss everything together.
Scatter with the celery leaves and serve.
