Quinoa coated chicken goujons
Gluten-free chicken goujons. Much healthier alternative to the shop bought variety.

370g cooked quinoa

5 skinless, boneless chicken breaasts, cut into strips

125ml buttermilk

45g gluten-free bread crumbs

Salt and black pepper

Olive oil, for brushing

Preheat oven to 180°C/350°F/Gas mark 4.

Line a baking tray with baking parchment

Spread the quinoa on to the baking tray and bake until golden.

Let cool, then transfer to a food processor or blender. 

Pulse the quinoa for a few minutes.

Add the quinoa to a large bowl and add in the gluten free bread crumbs, salt and pepper. Stir to combine.

In another bowl place the chicken, buttermilk and season.

Remove each piece of chicken from the buttermilk, and dredge through the crumbs, pressing gently to adhere.

Place on to the prepared baking sheet.

Repeat until all the chicken has been used.

Make sure not to crowd the baking tray, if necessary use two baking sheets.

Brush with a little olive oil before baking.

Turn once after around 15 mins, then bake for a further 15 mins until golden and crispy.
