Rainbow fairy cakes
The kids loved  these because they are different colours inside and they are lots of fun to decorate.

100g (4oz) butter, softened
100g (4oz) caster sugar
2 medium eggs, beaten
150g (5oz) self raising flour
a few drops Natural Vanilla Extract
A few drops of Red, Blue and Yellow food colouring.

Preheat the oven to 180ºC/ 350ºF/ Gas Mark 4. Line tin with the Baking Cases.

Place  butter in a bowl with the sugar and beat until light and creamy.

Whisk in the eggs along with 50g (2oz) flour. Sieve in the remaining flour and add a few drops Natural Vanilla Extract.

Divide the mixture into 3 bowls and add a few drops of food colouring to each bowl, red, blue and yellow. Put a spoonful of red mixture into a baking case, then one of blue mixture and then one of yellow.

Bake in the oven for about 20 minutes until risen. Transfer to a wire rack to cool and decorate with icing and sprinkles.
