Tombstone cookies

Tombstone cookies

225g butter, at room temperature
110g caster sugar
275g plain flour
1 tsp vanilla extract
100g plain chocolate

Preheat the oven to 170.

Whisk the butter until soft, add sugar and whisk again until light and fluffy. Add vanilla extract.

Sift in the flour and combine until mixture forms a dough.

Cover with cling film and put into the fridge for 30 minutes.

Roll out and cut into shape of tombstones.

Place on lightly floured baking tray and bake for 12-15 minutes until golden brown..

While the cookies cool, melt the chocolate in a bowl over a saucepan of hot water.

Pipe chocolate onto each cookie, spelling out RIP. Allow chocolate to set and enjoy.
