Real Spanish tortilla

This tortilla is the most commonly served dish in Spain and uses only 5 ingredients, but is rich in protein. Have for dinner or make in advance and pop a slice in your child's lunchbox for school.
500g new potatoes
1 large white onion
150ml olive oil
3 tbsp chopped flatleaf parsley
8 eggs
Scrub the potatoes in cold water. Leaving the skins on, cut them into thick slices.
Slice the onion.
Heat the oil in a large frying pan. Add the onion and lightly saute.
Then add the potatoes. Stew the onions and potatoes, partially covered, turning them occasionally for approx. 30 minutes or until the potatoes are softened.
Strain the onions and potatoes through a large colander and set the strained oil aside.
Beat the eggs then stir the mixture into the potatoes with the chopped parsley and plenty of salt and pepper.
Pour a little of the strained oil back into the pan, over a moderate heat. Tip the whole potato mixture into the pan. Using a spatula, shape the omelette into a cushion shape.
Cook on a moderate heat for approx. 5-10 minutes.
Meanwhile heat the grill. Pop the frying pan under the grill until the egg is just set.
Slide the tortilla onto a plate and cut into wedges.
