Risotto
This is a perfect and delicious meal if you are entertaining guests.
 
 

500ml chicken stock

2 tbsp olive oil

2 cloves garlic, finely chopped

1 large onion, finely chopped

100g mushrooms, finely sliced

350g rice. cooked

50g butter

60g parmesan, freshly grated

Bring the stock to the boil and allow it to simmer.

Heat the oil in a frying pan and cook the onion and garlic.

Add the rice and mushrooms to the pan and coat with the oil.

Stir in the stock a little at a time until it has been absorbed.

Remove from heat and stir in the butter and cheese. Put a lid on the rice and leave to stand for 2 minutes.

Serve hot.
