Roast chicken

1 lemon, halved

1 chicken, weighing about 1.3kg

2 onions, chopped

Olive oil

Black pepper

To serve:

Bread sauce

Crisp roast potatoes

Glazed carrots

Heat the oven to 180°C/350°F/Gas 4

Place the lemon halves inside the chicken.

Take a roasting pan a bit larger than the chicken and sprinkle with the onions.

Put the chicken into the pan then brush generously with olive oil.

Sprinkle with salt and pepper and rub into the skin.

Place the chicken on the side and put in the oven for about 30 minutes.

Turn the chicken onto its other side then put back in the oven for 30 minutes more.

Place the chicken front-side up and roast for another 25 to 30 minutes.

To make sure the chicken is cooked through, poke on leg on its thickest part with a skewer or a fork: clear juices should come out of it.

Remove the chicken from the pan and put onto a warm serving dish. Set aside for 10 minutes, keeping it warm.

Carve the chicken and serve with bread sauce, crisp roast potatoes and Vichy carrots.
