Savoury courgette fritters

Easy crisp vegetable patties delicious with dipping sauce.
50g plain flour
2 eggs
50ml milk
1 courgette, grated
1 tbsp oil
Fresh dill, garnish
Creme fraiche, optional, to serve
Sweet chilli sauce, to serve
Tip the flour into a bowl.
Make a well in the centre and break in the eggs.
Slowly whisk together, adding the milk, a little at a time, to make a smooth batter.
Stir in courgette and season well.
Heat the oil in a non-stick frying pan.
Add tablespoons of the batter to and cook for 2-3 minutes on each side until lightly golden.
Scatter with dill.
Serve with sweet chilli sauce and crème fraiche.
