Seared scallops on lettuce

Scallops are particularly light and their mildly sweet flavour isn’t particularly fishy.
6 scallops
Lettuce leaves to garnish
15g butter, room temperature
3 tsp olive oil
Salt and freshly ground black pepper, to season
Heat the butter in a frying pan over a medium to high heat.
Rub the oil and a little salt and pepper over the scallops before putting in the pan.
Sear the scallops for 2 minutes on each side.
Serve the scallops on a bed of lettuce.
