Simple poached chicken
This easy family meal packs so many nutrients in one dish with loads of seasonal vegetables.
 

2 kg whole chicken

1 handful fresh flat-leaf parsley

4 fresh bay leaves

2 handfuls new potatoes, scrubbed

2 handfuls baby carrots

2 handfuls baby turnips or radishes

1 bulb fennel, quartered, tops removed and reserved

Horseradish, freshly grated (if available though not essential)

170g horseradish, optional

285ml crème fraîche

2 handfuls fresh peas/frozen are fine

100g spinach

Stuff the chicken with parsley and bay leaves.

Place the chicken in a large stock pot and cover it with water by 2.5cm.

Add a generous teaspoon of salt.

Add in the potatoes, bring to the boil, then turn down the heat and place a lid on top. 

Simmer for about 20 minutes.

Add the baby carrots, turnips or radishes and fennel.

Cover and simmer for 30 to 40 minutes.

When you can easily pull the leg bone away from the chicken, it’s ready.

To serve, carefully remove the chicken to a bowl and add the peas, and spinach to the stock at this point and cook them for one minute, season to taste.

Divide a mixture of the vegetables between 6 bowls, put some shredded chicken over top then ladle over some of the cooking stock.

Sprinkle over some of the chopped reserved fennel tops and a dollop of horseradish and crème fraîche.
