Slow cooked lasagne

This is a huge family classic, yet now with no fuss for Mum.
2 tbsp olive oil
200g mixed mushrooms, chopped
1 red pepper, seeded and roughly chopped
1 onion, finely chopped
240g baby spinach, chopped
450g light cottage cheese
300g grated mozzarella cheese
¼ tsp salt
440g pasta sauce
2 courgettes, sliced
400g lasagne sheets
Heat the oil in large skillet over medium-high heat then add mushrooms, pepper, onion and spinach, and cook for 5 minutes, or until the cooking water evaporates.
Mix the cottage cheese and 250g of the mozzarella cheese with some salt in a large bowl.
Assemble the lasagne in the slow cooker with first the pasta sauce, a single layer of lasagne sheets, ⅓ of the cooked vegetables a single layer of the courgettes and ⅓ of the cottage cheese mixture.
Repeat for another 2 layers.
Sprinkle 50g of the mozzarella cheese on top.
Cook on low 5 for hours, or until everything has gone tender.
Serve with a green salad if you like.
