Slow cooker Carnitas
These amazing tacos are one to make for a group or gathering. Amazingly easy and completely scrumptious.
 

2kg pork roast

1 tbsp olive oil

1 large onion, chopped

5-6 garlic cloves, peeled and crushed

235ml fresh squeezed orange juice

1 tbsp salt

1 tbsp cumin

2 tbsp chilli powder

1 tsp ground black pepper

Grease the bottom of the slow cooker with the olive oil.

Cut the pork into large chunks and place inside the slow cooker.

Then add all remaining ingredients around the pork.

Cook on low for 8 hours, or high for 4-6 hours.

Once the pork is fork-tender, use 2 forks to shred the meat into the juices. 

If you like your carnitas crispy, remove from the slow cooker to a foil lined baking tray and cook under the grill for 2-5 minutes or until desired effect has been achieved.

Serve with tortillas and any toppings you prefer.
