Sparkling mini Christmas cookies
These cookies are a lovely Christmas present.

200g Siucra granulated sugar

175g unsalted butter, soft and cut into small cubes

400g flour, sieved

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp salt

2 large eggs

For decoration

200g Siucra icing sugar, sieved

Red food colouring

Sugar sprinkles

Cream the butter and sugar together until pale, then add the eggs and vanilla. In another bowl, combine the flour, baking powder and salt. Add the dry ingredients to the wet ingredients and combine. 

Shape the dough into two flat discs and wrap in cling film. Refrigerate for 2 hours. 

Preheat the oven to 180°C/350°F/Gas 5 and line two trays with non-stick baking paper. 

Roll out the dough on a lightly floured surface to about 4 mm. Cut out the cookies using cookie cutter and place on the prepared trays. Bake for 10 minutes, until lightly golden and let cool on a wire rack.

Meanwhile, mix the icing sugar with a few drops of cold water to make a thick icing. Colour with red food colouring and using a piping bag, spread it over the cooled biscuits. Decorate with sugar sprinkles.
