Spicy falafels
These falafels are so easy to make, ready in minutes and great for snacks and lunchboxes.

2 tbsp sunflower or vegetable oil

1 garlic clove, crushed

1 small onion, finely chopped

400g chickpeas, washed and drained

Juice of 1/2 a lemon

1 tsp ground cumin

Handful of chopped parsley and coriander

1 egg, beaten

In a pan, heat 1 tbsp of oil and add the chopped garlic and onion.

Cook over a low heat for 5 minutes until soft.

Transfer into a large mixing bowl and add in the chickpeas, lemon juice, cumin and herbs.

Mash together with a fork or use a hand blender until well combined.

Add the egg gradually and mix well.

Mould into six balls with your hands and heat the rest of the oil in the pan.

Fry the falafels on a medium heat  for 3-4 minutes on each side until golden in colour.

Serve hot with pitta bread or salad.
