Spicy turkey and vegetable fried rice

Why not indulge in a Christmas style fried rice with leftovers readily to hand.
2 tsp sesame oil
2 eggs, beaten
1 red chilli, sliced (optional)
Small bunch spring onions, chopped
300g cold cooked rice (can be made the night before)
200g mixed leftover vegetables of choice
1 red pepper, chopped unto small chunks
2 tbsp each soya sauce and sweet chilli sauce, plus extra to serve
85g frozen peas
2 thick slices ham, chopped
100g shredded leftover turkey
2 spring onions, finely sliced (as garnish)
Heat half the oil in a wok or large frying pan. Add the eggs and swirl to coat the base of the pan and allow to set.
Flip over and cook for 1-2 minutes. Once cooked, remove from the pan, shred and set aside.
Add the remaining oil to the pan, then stir-fry the chilli, and spring onions for 1 minute.
Add the remaining ingredients along with the egg, and heat through, stirring until the turkey is piping hot.
Serve immediately with some extra soy and sweet chilli sauce and spring onions, if using.
