Spinach and white bean salad with bacon
A low-calorie, high in protein and iron dish with a medley of lovely flavours and textures.
 

12 rashers streaky bacon

4 tbsp sherry vinegar

2 x 280g roasted red peppers, drained and sliced

2 x 400g tins white or cannellini beans, drained and rinsed

150g baby spinach leaves

In a large frying pan, cook the bacon until crispy. Remove and drain on kitchen paper.
Keep the fat from the bacon in the pan, add the vinegar and bubble before tipping in the peppers and beans.
Season with pepper and heat through. In a bowl, toss together the spinach, beans, peppers and bacon, then drizzle with a dressing of your choice.
