Spinach, berries and goats cheese salad

Spinach, berries and goats cheese salad
This bright and tangy salad is both sweet and savoury, and the pecan nuts give it a bite.
 

1 tbsp brown sugar

2 tbsp red-wine vinegar

1 tbsp olive oil

Pinch salt

Freshly ground pepper, to taste

250g baby spinach

150g fresh strawberries, washed and sliced

100g blueberries, washed

100g blackberries, washed

100g goats cheese, crumbled

Handful of toasted chopped pecans to garnish

In a small bowl, combine your brown sugar, vinegar, oil, salt and pepper together to make a light sauce.

Wash your spinach leaves and fruit. Slice your strawberries or cut into quarters, depending on your preference.

Layer your spinach onto a large serving bowl and top with your fruit and crumbled goats cheese. Drizzle your sauce over the spinach leaves.

Garnish with the pecans before serving.
