900g fresh spinach
Bunch spring onions, finely sliced
250g ricotta cheese
200g halloumi, grated
400g feta, crumbled
2 eggs, lightly beaten
2 tbsp dried mint
25g fresh dill, finely chopped
25g fresh flat leaf parsley, chopped
75g melted butter
2 x 270g filo pastry sheets (you will use 9 sheets)
