Spring cabbage, apple and prawn salad
A fresh well combined salad with fruits and shellfish makes for the ideal Spring starter.

6 tbsp plain yoghurt

½ tsp Dijon mustard

2 tbsp mayonnaise

½ white cabbage

2 carrots

½ onion

1 green apple

250g cooked small peeled prawns

20g fresh coriander, as garnish

Mix the yoghurt, mustard and mayonnaise together in bowl.

Roughly chop the cabbage, carrots, onion and apple.

Dress with the yoghurt dressing then add the prawns and garnish with the coriander
