Spring onion jacket potatoes with smoked fish
High in omega-3s and proteins, this meal is well balanced.
 

4 medium size potatoes

300g peppered smoked mackerel fillets, skis discarded

4 spring onions, finely sliced

4 tbsp low-fat crème fraiche

Handful, watercress or rocket (optional as a side garnish)

1 lemon

Preheat the oven to 200°C / 400°F / Gas mark 6.

Scrub the potatoes, then dry and prick each one several times with a sharp knife.

Rub a bit of olive oil over top, sprinkle with salt then wrap each in foil and bake in the oven 1¼ hours or until soft.

When the potato is almost ready, in a bowl mix together the mackerel fillets with the spring onions and crème fraiche.

Remove the potatoes, slice them a bit open and spoon over the mackerel mixture.
