Lovely little ginger star biscuits will be a hit with the entire family.
125g vegetable spread
50g brown sugar
1 egg yolk
40g puffed rice cereal, crushed finely
165g self-raising flour
2 tsp ground ginger
2 tbsp golden syrup, warmed
Icing sugar, edible silver balls, edible glitter (optional for decoration)
Preheat the oven to 160°C / 325°F / Gas mark 3.
Line 2 baking trays with greaseproof paper and set aside.
Use an electric mixer or food processor to beat the vegetable spread, sugar and egg yolk until light and fluffy.
Gradually stir in puffed rice granules, sifted flour, ground ginger and golden syrup and mix well.
Bring the dough together using your hands and lightly knead to a smooth texture.
Roll to ½ cm thickness on a lightly floured surface and cut out shapes from the dough using a star cutter.
Re-roll excess dough to cut out remaining biscuits.
Place on the baking trays and bake, uncovered, in the oven for 20 minutes or until browned.
Allow to cool slightly on trays; transfer to a wire rack before decorating with icing and any decorations you fancy.
