Steak and vegetable pesto
A simple and absolutely delicious recipe that secretly combines vegetables in a rustic sauce served with juicy steak over pasta.

1 small courgette

½ yellow pepper

3 tbsp Parmesan cheese, grated

2 tbsp pine nuts

Handful basil

2 cloves garlic

¼ tsp ground black pepper

Cooked pasta of choice

340g stir fry sirloin steak

In a food processor, combine all of the ingredients with the exception of the pasta and the steak and blitz until creamy and set aside.

Heat a griddle pan over medium heat and cook the steaks on either side for 3 minutes or to achieve desired outcome.

Toss in the sauce and coat well.

Add in the pasta and coat thoroughly before serving directly.
