This delicious stew is simple, budget friendly and ideal for larger gatherings.
4 tbsp olive oil
2kg stewing lamb
2 onions, roughly chopped
2 cloves, garlic peeled and roughly chopped
8 tbsp tomato paste
Suggest serving with baby potatoes and salad
Heat the oil in a deep cooking pan and brown the lamb in batches stirring.
Transfer once browned as you go to a large pot.
Add the onions and fry for another few minutes then add in the garlic and cook for a further few minutes until they are slightly translucent.
Add the tomato paste, a generous amount of salt and pepper and stir to mix through.
Pour the onion and garlic mixture into the pot with the lamb and cover halfway up the pot with boiling water.
Allow to bubble for 10 minutes.
Reduce the heat to the lowest simmer and leave for 2 hours, stirring occasionally until the meat is tender then serve with baby potatoes and salads if you like.
