Strawberry and white chocolate cheesecake

40g unsalted butter, melted

100g digestive biscuits

300g strawberries, hulled and quartered

2 tbsp blackcurrant cordial

500g mascarpone

4 tbsp icing sugar

1/2 tsp vanilla extract

100g white chocolate, roughly chopped

Process the biscuits in a food processor. Combine with the melted butter.

Pour into 6 large ramekins or 12 shot glasses. You should have about 1cm layer of biscuit in each. Press down firmly.

Put in the fridge for about 10 minutes to firm up.

Marinate a handful of strawberries in the blackberry cordial and leave aside.

In a bowl, mix together the mascarpone, icing sugar, vanilla extract, the rest of the strawberries and the white chocolate. Tip over the biscuit crust and even out.

Top with the strawberries and cordial and chill until serving.
