Strawberry sorbet

250g caster sugar

500g strawberies hulled, plus a few to garnish

2 tsp balsamic vinegar, good quality

1 egg white

Tip in the sugar into a saucepan together with 250ml water, simmer and cook for a further 2 minutes and leave to one side to fully cool.

Blitz the strawberries in a food processor and then strain through a sieve to remove any seeds.

Stir in the sugar syrup and vinegar.

Add the strawberry mix into a sealable container and freeze until it is almost set, checking after 3 hours. Use a fork to break up the mixture and then add it into the food processor, together with the egg white and blitz until you have a slushy mixture

Add the mixture back into the container and refreeze.

Use an ice-cream scoop to serve with fresh berries.
