Stuffed cucumbers with cream cheese

These stuffed cucumbers are easy to make, aren't messy to eat and require no cooking making them ideal for parties or quick snacks. They look pretty impressive as well.
2 large cucumbers
150g cream cheese
½ red pepper, finely chopped
Handful fresh parsley
Peel off the cucumber skin, but not all of it - you can skip this part if you like though.
Cut the cucumbers into 3 inch size sections.
Use a sharp knife to cut out the soft centre of the cucumber slice.
Fill the hole with the cream cheese.
Cut your pepper into small cubes and put on top of the cream cheese.
Garnish with parsley before serving.
