Stuffed peppers with pork
Simple family meals like this can be made with any meat variety but pork is particularly nice combined with a medley of vegetables to compliment. 
 

500g pork mince

4 large red or yellow peppers

1 large onion

2 carrots

4 cloves of garlic

½ head cauliflower

4 tbsp tomato paste

1 tbsp dry oregano

1 tbsp dry or fresh tarragon

Salt and pepper to taste

Cut the tops of the peppers and remove the seeds.

Arrange peppers in the slow standing up and make sure they fit securely.

Pulse the onion, carrots, garlic and cauliflower in the food processor or finely chop them.

In a large bowl, combine the ground pork, vegetables, salt and pepper and tomato paste.

Stuff the peppers with the mixture and arrange leftover meat between the peppers.

Add 120ml of water, cover and cook on low for 8 hours.
