Surprise fridge cake

110g unsalted butter, cubed, plus more for greasing
150g plain biscuits
90g caster sugar
2 tbsp golden syrup
1 tbsp cocoa powder
50g chocolate, 50% cocoa solids
150g assorted sweets, mini marshmallows, Malteasers, Crunchie and caramel bars
For the topping
75 - 100g chocolate, 50% cocoa solids
Grease a 24x11cm loaf tin. Line with an oversized piece of plastic wrap.
Put the biscuits in a zip-lock bag and crush them with a rolling pin.
Pour the butter, sugar, syrup, cocoa and chocolate in a small pan then melt over low heat. Turn off the heat and let it cool down to lukewarm.
Mix in the biscuits as well as the chocolates and sweets and stir well. Pour into the loaf tin then fold the excess plastic wrap back over the mixture. Put in the refrigerator to harden for a few hours.
Pull up the plastic wrap to take the cake out of the tin then turn over onto a serving dish.
Making the topping: Place the chocolate into a small heatproof bowl and melt in a bain-marie. Pour on top of the cake and keep in the refrigerator for at least 20 minutes before eating.
