Thai red beef curry

Thai red beef curry

450g beef fillet steak, thinly sliced

Marinade:

1/2 tbsp sugar

1/2 tbsp light soy sauce or 1 tablespoon dark soy sauce

1-2 tbsp cornflour, mixed with 1 tablespoon water

2 tbsp oil

3 tbsp Thai red curry paste

1 medium onion, finely sliced

8 baby sweetcorn, halved

1 green pepper, chopped

Sauce:

1 (400g) tin coconut milk

Marinade the steak in sugar, soy sauce and the cornflour mixture for 20 minutes.

In a large frying pan, heat 1 tablespoon oil over high heat.

Add in the beef and stir-fry until lightly brown, about 3-4 minutes, turning half-way. Remove from the pan and leave to one side.

In the same frying-pan heat 1 tablespoon oil and add the red curry paste. Stir until fragrant, 1-2 minutes. Tip in the onion and cook until soft, about 3-4 minutes.

Mix in the baby sweetcorn and green pepper. Add coconut milk, seasoning and the beef.  Simmer for 5-6 minutes and serve with fragrant basmati rice.
