Toffee popcorn
Fun recipe for a movie night with the kids or to serve at children's party

150g popcorn
3-4 tbsp vegetable oil (like rapeseed or sunflower oil)

To make the toffee
80g butter
4 tbsp golden syrup
80g brown sugar

Take a large saucepan and heat the oil.

Sprinkle the popcorn into the bottom of the pan – lift the pan and swirl the popcorn kernels to coat them evenly in oil.

Cover with a tight-fitting lid. Turn the heat down low and listen for popcorn popping noises! The minute the popping noises trail off, take it off the heat otherwise it will burn. The pot gets very hot so be careful not to burn your hands.

In the meantime, using a saucepan on top of the stove, melt the butter.

Add the golden syrup and the brown sugar and stir continuously over a high heat for 1-2 minutes.

Pour the cooked toffee over the popcorn whilst still in the saucepan. Put the lid back on the pan and shake it well to cover the popcorn with toffee.

Spoon or pour into small bowls – allow it to cool a little and serve.
