Tuna and sweetcorn baked potato
4 large (1.2kg) potatoes
425g can tuna in springwater, drained, flaked
2 x 125g can corn kernels, drained, rinsed
1/4 cup whole-egg mayonnaise
1 green onion, thinly sliced diagonally
Preheat oven to 180°C/ 350°F/ gas 4. Wash potatoes and pierce each potato several times with a fork before wrapping in foil.
Bake in oven for 1 hour 30 minutes or until tender.
Transfer to a plate and leave to stand for 10 minutes.
Mix tuna, sweetcorn and mayonnaise in a bowl. Season with salt and pepper.
Take foil off potatoes and cut a cross in the top of each potato and top with tuna mix.
