Vegetable and ham hash

Easy hash using up leftover vegetables and ham makes this a quick delicious family meal.
1 tbsp olive oil
400/500g left over ham, shredded or chopped into chunks
6 cooked potatoes, sliced
350g cooked, sliced leeks, cabbage or Brussel sprouts
1 tbsp creamed horseradish sauce
100g mature cheddar, grated
Using a large frying pan, add the olive oil and heat through over a medium heat.
Turn the heat to high, then add the potatoes and vegetables being used and stir well.
Continue to cook on a fairly high heat until the potatoes begin to brown and turn crisp.
Toss the ham in along with the creamed horseradish and heat for a further 2-3 minutes.
Take the pan off the heat, sprinkle in the cheese, season well and gently stir to combine.
Serve straight away.
