Vegetable pancakes
These savoury pancakes are full of vegetables giving them brilliant colours and lovely textures.

225g wholemeal self-raising flour

150g raw vegetables, chopped finely

2 eggs, lightly beaten

100g white or red cheddar, grated

355ml milk

Salt and pepper

50g butter (for frying)

Cream cheese with some chives to serve (optional)

In a bowl, whisk all ingredients except for butter and cream cheese together.

Heat a little butter in a frying pan.

Using large spoonful dollop measures to fry each pikelet until golden then flip.

Serve warm with cream cheese and chives if using.
