Vegetarian Superfood, & Feta with Brennans Wholewheat Brown Bread

75g red pepper hummus
8 slices of Brennan’s Wholewheat Soda Bread
25g baby spinach leaves
1 cooked beetroot (from a vac pac, unvinegared), sliced
½ small carrot, peeled and grated
100g feta cheese
small handful sprouted shoots
freshly ground black pepper
Spread the red pepper hummus over one side of each slice of bread.
Grind black pepper over four of the slices and arrange the spinach leaves on top.
Lay the beetroot slices on top and scatter the grated carrot over.
Crumble the feta cheese over and top with the sprouted shoots.
Top each one with a remaining bread slice, hummus side down.
Either serve straight away or wrap up and keep chilled until ready to enjoy.
