White chocolate and cranberry cookies

Tasty cookies which kids and grown-ups alike will love.
135g butter
80g caster sugar
80g soft brown sugar
1 egg
½ tsp vanilla extract
190g plain flour
½ tsp salt
¼ tsp ground cinnamon
½ tsp bicarbonate of soda
100g dried cranberries
60g white chocolate chips
Preheat the oven to 170°C/325°F/Gas 3.
Line a baking tray with a sheet of baking paper.
Cream together the butter, caster sugar and soft brown sugar.
Add the egg and vanilla extract and beat together.
Sift the flour, salt, cinnamon and bicarbonate of soda and fold together well.
Mix through the white chocolate and dried cranberries.
Roll the dough into balls and spread out on the prepared baking tray.
Bake for around 15 minutes until lightly golden on top.
Leave to cool on the tray for 10 minutes before transferring to a wire rack to cool completely.
Repeat this process until all the dough has been used.
