Apple pancakes

Apple pancakes
Beautiful panckakes with hidden apples and visible ones, make a lovely snack, treat or breakfast.
 

165g self-raising flour, sifted

2 tbsp caster sugar

1 egg, lightly beaten

300ml buttermilk

140g apple puree

20g butter, melted

½ small apple, cut to your liking for decoration (optional)

In a bowl, combine the flour and sugar.

Make a well in the centre.

Whisk in the egg and buttermilk together in a jug or bowl.

Add the buttermilk and egg mixture to the flour mixture.

Mix until smooth.

Stir in puree.

Heat a large frying pan over medium heat.

Brush the base with butter.

Using tablespoons of batter at a time, cook in batches for 2 to 3 minutes or until small bubbles start to form on the surface then turn over.

Cook for 1 to 2 minutes, or until cooked through.

Transfer to a wire rack to cool.

Serve with the chopped apples if using.
