Asparagus and spinach soup

An ultimate green soup, this healthy vegetable soup is simple and uses lovely easy ingredients.
25g butter
1 tbsp vegetable oil
350g asparagus spears, stalks chopped, ends discarded, tips reserved
1 small onion, finely sliced
2 garlic cloves, crushed
2 large handfuls spinach
700ml vegetable stock
Crusty bread, to serve (optional)
In a large saucepan, heat the butter and oil until the butter foams.
Fry the asparagus tips for a few minutes to soften. Remove and set aside.
Add the onion, asparagus stalks and garlic, and cook for 5-10 minutes until softened.
Stir in the spinach, pour over the stock and bring to the boil. In a food processor blitz until smooth.
Season generously with salt and pepper then add hot water to loosen if needed.
Ladle into bowls and scatter the asparagus tips over each.
Serve with the crusty bread.
