Baked salmon with lemon and herbs
Baked salmon is a stunning centrepiece for a large party of fish lovers. 
 

60g butter

4 lemons, thinly sliced (reserving some for decoration)

100g fresh dill, plus extra for decoration

3 x 1kg sides of salmon, skin removed (from fish monger)

8 fresh (or 12 dried) bay leaves

200ml white wine

Small cucumber, sliced thinly for decoration (optional)

Preheat the oven to 200°C / 400°F / Gas mark 6.

Line a very large baking tray with greaseproof paper.

Grease it with a little of of the butter.

Put two thirds of the lemon slices in a single layer in the middle of the lined tray and top with half of the dill.

Place the salmon sides on top of the lemons and season well with salt and pepper.

Top with the rest of the lemon slices, bay leaves and dill.

Dot the remaining butter over the top of the fish.

Pour the wine around the salmon.

Cover the entire tray with kitchen foil but leave it slightly loose so some steam can escape while cooking.

Bake in the oven for 35-45 minutes, or until the fish flakes easily with a fork.

Once cooked, remove from the oven and remove the kitchen foil.

On a large serving platter, place the sides of salmon on then dress each with the fresh dill, slices of lemon and cucumber.
