Chicken with cheese stuffing

Chicken with cheese stuffing
Serve with mash or roast potatoes for a delicious mid week dinner.
 

1 tbsp butter

3 apples, peeled and thinly sliced

2 tbsp sugar,

6 chicken breasts

250g tasty cheese, cut into 1.5x10cm sticks

115g breadcrumbs

240g full-cream milk

1 tbsp grapeseed or vegetable oil

Preheat oven to 180°C/ gas mark 6.

Melt the butter in a frying pan and add the apples and sugar. Sauté for 5 minutes or until caramelised.

Remove apples and set aside to cool completely.

Remove the chicken tender from the breast and create a 2cm hole down the middle. Make sure you don’t puncture the sides of the breast.

Stuff each one with the apple sauce and cheese sticks.

Dip each piece of meat into the milk first and then the breadcrumbs. Leave to sit on a plate.

Add the oil to a frying pan and fry each chicken piece until lightly golden on each side.

Next, place onto a baking sheet and cook in the oven for 10 minutes or until cooked thoroughly.
