Bacon and tomato pasta bake

500g penne pasta

3 tomatoes, chopped

6 slices shortcut bacon, diced

160g cheddar cheese, grated

300ml sour cream

3 eggs, lightly beaten

6 shallots, sliced

240g mozzarella cheese, grated

115g breadcrumbs

1 tbsp olive oil

Preheat the oven to 180°C or gas mark 5.

On a medium heat, gently cook the bacon in a little oil for 4 minutes on each side. Set aside.

While the bacon is frying you can cook the pasta, according to instructions.

Once the pasta is cooked set aside and allow to cool a little. 

In a large bowl, combine the tomatoes, cheddar cheese, sour cream, eggs and shallots together. Toss in the cooked pasta and bacon ensuring all ingredients are mixed well. 

Grease a large baking dish. Spoon the mixture into the baking dish and top with the mozzarella cheese and breadcrumbs.

Bake in the oven for 40 minutes.
