Bacon, leek and brie quiche

Bacon, leek and brie quiche
Serve slightly warm with a salad.
 

125g cold butter

160g plain flour

1 egg, chilled

1 tbsp cold water

4 rashers bacon, chopped roughly

250g brie, sliced

2 leeks, finely diced

6 eggs

120g cream

120g milk

A sprig of thyme

Preheat the oven to 180°C or gas mark 4.

Make the pastry by combining the butter and flour together.

Add the water and egg and combine until the mixture is a soft dough.

Roll into a flat circular shape and cover with cling film. Place it in the refrigerator for an hour.

Roll out the pastry onto a floured surface.

Press it into the pastry tin, make sure you leave some overhang as the pastry will shrink during baking.

Fill with pie weights and bake for 15 minutes or until browned at edges.

Once baked, leave to cool.

Layer the bacon, leek and brie on the pastry.

In a separate bowl, mix your eggs, cream, milk, thyme and pepper together.

Pour over the top of your quiche and bake for 20-25 minutes.
