Croque Madame

This twist on a French classic is simple, tasty and filling.
1 brown or multigrain roll
3 slices of Emmental or Edam cheese
2 slices of ham
1 large free range egg
Cut the roll in half and toast each side under the grill.
Bring a saucepan of water to the boil and turn down to a simmer. Swirl water with a knife and add the egg.
When the roll is toasted, place a slice of ham on each half and split the cheese between the two. Return to the grill.
When the cheese is bubbling and golden, move to a plate and place your poached egg on top. Eat on its own or with a salad.
