Golden fruit cake

This seasonal cake is easy to make and wonderful with tea and some friends or family to share it with.
For the topping
350g roughly chopped dried pears
250g roughly chopped dried apricots
250g golden sultanas
175g soft butter
200g caster sugar
125ml white rum
200g marmalade
225g ground almonds
35g sesame seeds
3 cardamom seeds
¼ tsp ground coriander
3 large eggs
75g whole blanched mixed nuts
Preheat the oven to 150°C / 300°F / Gas mark 2.
Line the bottom and sides of a 20cm high sided tin with baking parchment and should come up over about 10cm above the tin.
Roughly chop the pears and apricots into small pieces and put them into a saucepan with the sultanas, butter, sugar, rum and marmalade.
Simmer for 10 minutes and then leave to stand for 30 minutes.
Stir the ground almonds, sesame seeds, cardamom seeds and coriander into the saucepan.
Beat in the eggs and spoon into the prepared cake tin.
Decorate the cake with a smattering of varied nuts then bake for 1 hour 40 minutes, then leave to cool completely in the tin.
Once cool, take out of the tin, and serve.
