Indian soup
This budget friendly soup is easy to make and wonderfully delicious during the cold season.
 

1 tbsp vegetable oil

1 medium red onion, chopped

1 tsp finely grated fresh root ginger

1 garlic clove, chopped

1 tbsp garam masala

850ml vegetable stock

2 large carrots, quartered lengthways and chopped

400g tin chickpeas, drained

100g green beans, chopped

Naan bread to serve, optional

In a medium saucepan, heat the oil then the onion, ginger and garlic.

Fry for 2 minutes, then add the garam masala and cook for 1 minute before adding the stock and carrots.

Simmer for 10 minutes, then add the chickpeas.

Stir in the beans and simmer for 3 minutes.

Serve with naan bread if you like.
