Lamb chops with herb pesto and roast carrots

Coriander pesto covered lamb chops, a delicious alternative dish.
4 carrots, peeled and roughly chopped lengthwise
4 tbsp oil
6-8 lamb loin chops
50g roasted peanuts
20g coriander, roughly chopped
1 garlic clove
Preheat the oven to 180°C / 350°F / Gas mark 4.
Line a baking tray with greaseproof paper and layer the carrots on with a drizzle of olive oil, salt and pepper and cook until tender and slightly golden.
Rub a little oil onto each side of the lamb, then season to taste with salt and pepper.
Grill, over medium-high heat for 5 minutes, then turn over and grill 5 minutes more for medium; 7 minutes for well done.
Meanwhile, crush together the rest of the ingredients with the remaining oil with a mortar and pestle, to a rough paste.
Serve the chops with the pesto drizzled over along with the delicious roast carrots and perhaps some peas if you like.
